In the vast realm of food science, a pivotal industry responsible for global food management, testing, and research,  exists a highly important and often underlooked career that may be considered as one of the most crucial roles in the field. Food chemists, also known as food flavourists, are responsible for the continuous improvement of the foods and drinks we consume regularly, and today we’ll be shedding some light on this important career in the industry!

Flavour chemists focus on interacting and examining the relationship  between our olfactory and gustatory systems, more simply, our senses of smell and taste. Commonly, food chemists tend to work in the food and beverage industry, but do hold prominence in other key areas, like pharmaceuticals, pets, and cosmetics. According to Purdue University, flavour chemists research and analyze the change in quality of certain food products when exposed to changes, e.g.(canning, heating, freezing, packaging). Flavour chemists test different substances to replicate certain scents and tastes, through using preservatives, additives, and food colourings. Furthermore, significant time is spent ensuring the alignment of food labels and the actual product is correct; being a flavour chemist allows one to dive deep into the chemical composition of flavours and smells, while actively supporting the creation and improvement of aromas and foods people love worldwide.

When it comes to daily tasks, flavour chemists use insightful knowledge, past experience, and practice to complete tasks, with work done in labs requiring a pristine balance of problem-solving, curiosity, and attention-to-detail. Flavour chemists spend significant time in flavour labs, and many major tasks take place here. For example, sensory evaluation is conducted regularly in labs, where individuals undergo blind identification exercises, designed to enhance recall and increase differentiation abilities between subtle changes. Additionally, flavour chemists, while in these labs, utilize their time in establishing improved ideas and processes,  modifying and recreating taste, while emphasizing the relationship processing, storage, and consumption stages with flavours.

Working in isolation is an unusual occurrence in the profession, as flavour chemists regularly cooperate with production specialists, regulatory teams, and product developers to formulate exceptional sensory experiences for new products. Although the job may seem enticing and enjoyable, being a food chemist does come with several setbacks. For instance, during the formulation process, many unwanted flavours or notes tend to appear, and concealing said notes tends to be a struggle for food chemists, as strategy and a cohesive balance is required to achieve perfect flavour harmony. Aside from that, responding to customer expectations by creating more natural, organic flavours is a challenge as well, and along with increasing flavour potency and stability, across a variety of conditions and situations, adds another layer of difficulty into the job of a food chemist.

The contributions food chemists provide to their communities, organizations, and the world as a whole is pivotal to our society, as it directly influences the food industry and our consumption of different items. Ensuring that products are proper and nutritious is the responsibility food chemists take everyday, with their impact going way past the lab. Food chemistry may seem like a trivial profession, but their role remains one of the most vital positions by far. So next time you pick up a carton of milk, or try a new flavour of chips, just know that the perfect sweet and saltiness, or that punch of umami goodness, has all been cultivated by fervent flavour-loving folks!
